La macchina è costituita da una gramola dosatrice, nella quale avviene la lavorazione della pasta d’oliva; una coclea, che conduce forzatamente la pasta su di un nastro di acciaio inox, in cui avviene la pressatura della stessa tramite un pistone idraulico munito di uno stampo in tephlon per alimenti. Il pistone si attiva comandato elettricamente, ad intervalli di 15 secondi. In questo range temporale avviene la pressatura di 50 centimetri di pasta d’oliva.
