Abstract

The invention relates to a new process for the production of bakery products and in particular panforte and the like in accordance with which the ingredients, comprising sugars, candied fruits, almonds or other dry fruit, and flour are made into a paste and baked in a single steam heated container, after which the paste, poured onto a flat surface, is cooled and rolled to the desired thickness. The semi-cooled mass is then shaped into the desired shapes by pressing or otherwise, and the individual shapes obtained are then sprinkled with sugar and/or flavouring spices or flavourings.
