Abstract

1439143 Ice confections UNILEVER Ltd 11 June 1973 [12 June 1972] 27427/72 Heading A2B A composite ice confection comprises an ice zone having a cone penetrometer softness (as defined) of less than 20 and an adjacent zone of a non-aerated edible fat dispersion comprising 3 to 60% fat and 97 to 40% of an aqueous sugar syrup, the fat forming the dispersed phase, and the dispersion having a cone penetrometer softness greater than 30. Preferably the aqueous phase in the ice zone contains less than 25% sugar, and that in the fat dispersion contains 40 to 75% sugar. The fat dispersion preferably contains non-dosing fat e.g. cocoa butter, borneo tallow, illipe butter, shea butter, hardened coconut, palm kernel, cotton seed, groundnut, palm, sunflower seed, sesame, corn, soybean safflower or rapeseed oil, or hardened whale or fish oil. The sugar may be glucose, fructose or invert sugar. The dispersion may include a hydrophilic emulsifier, e.g. cocoa protein. In the composite product the ice zone may surround the dispersion, or vice versa, or the dispersion may be formed as a ripple in the ice zone. The product may be extruded. The ice zone may be ice cream or water ice, a stick may be inserted to form an ice lolly. [GB1439143A]
