Abstract
1430471 Curd for cheese UNILEVER Ltd 16 March 1973 [18 March 1972] 12749/73 Heading A2B An apparatus (and process) for the coagulation of liquid milk products comprises a circular trackway and a plurality of linked vats mounted for movement round said trackway, driving means being provided to move said vats slowly, smoothly at constant velocity in sequence past a filling station for milk and coagulating agents, a cutting station, and an emptying station, said stations being located in sequence round said trackway. The cutting station has a device which is insertable into and movable with each vat in turn for cutting the curd coagulating therein. A similarly arranged stirring device may be provided between the cutting and the emptying stations. The curds and whey may be tipped from the vats onto a discharge chute at the emptying station, and a filter belt conveyor may transport the curd from the chute, with concurrent filtering off of whey, to moulding means, preferably with means to subdivide the curds leaving the conveyor into parallel stream. A stirring device may be provided at the end of the discharge chute.
