Abstract

Dried foods of vegetable origin contain at least 0.005 mole of a water soluble phytate per kg. of solids in the food. Addition of phytate enables the dried vegetables, such as peas, potatoes, and vegetable soups, to be rehydrated and cooked more rapidly and uniformly. [FR2084385A5]
