Abstract
The proposed method comprises selection of raw milk, checking, skimming, sterilisation by heat treatment and measuring into aerosol type dispensers. The fat content of cream is set at 30% by wt. The cream is homogenised in a vessel at 10 deg.C then at 70 deg.C using 30-50 bar pressure. The cream is then heated in under 1 min. to 120-130 deg.C and maintained at that temp. for 5 mins., the cream is cooled in under 55 seconds to 0-10 deg.C. - 7-8.5% Pref. 8% by wt. of sugar and 0.1-1.0% pref. 0.4-0.6% by wt. of edible gelatin are mixed with 5-10% of the cream, then mixed in with the rest of the cream at a temp. below 10 deg.C. The mixt. is heated to 75-85 deg.C pref. 80 deg.C and used to fill dispensers at 1 bar pressure. The dispensers are immediately fitted with a discharge stem and valve plate, and closed. They are rapidly cooled to 5 deg.C pref. 3-4 deg.C and filled with 2-2.5% by wt. (cf. that of cream) of propellant gas, pref. N2O at 20-25 bar pressure. - Finally the dispensers are fitted with discharge heads and closure caps and taken into cold storage. - Equipment comprises a closed pressure vessel (1) provided with a heating jacket and connected to a supply of compressed air via a steriliser, controllable magnetic valve (8) and a non-return valve (7). Pressure is sensed in the vessel and a transducer (6) produces a signal which is transmitted to the air inlet (magnetic) valve. Another magnetic valve (4) located in the vessel discharge is provided with a programmed timer.(Dwg.1/19)
