Abstract

Process which can be applied to the dairy-product technology sector. It consists of a method for increasing the storage period for refrigerated raw milk by means of the injection of CO2 into the milk in the refrigerated storage tanks and subsequent degassing by means of heat and vacuum in order to restore the product's organoleptic properties to it and to enable it to be consumed as liquid milk (pasteurised, UHT, sterilised) or to be used for producing dairy derivatives.
