Abstract
Low energy flour mixt. for use by diabetics is produced with enhanced protein content of several components at 30-40 wt.% of the total mixt. The digestible carbohydrate is 45 wt.% max., fibre content 6%mm., fat content 2-3%, moisture content 15 wt.% max. Energy content is 700-1000 kJ/100g of baked prod. With suitable additives the mixt. can be formulated into a finished flour for the prodn. of baking prods.
