Abstract

Quick-frozen fruit desserts are prepd. by (a) mixing, at 4-8 deg.C, 40-70 wt.% natural or gently heat-treated fruit pulp, 10-30 wt.% water, 5-20 wt.% sugar, 20-30 wt.% condensed milk or 8.10 wt.% milk powder and known stabilisers and/or emulsifiers; (b) homogenising the mixt. in the known way and precooling it to 0-4 deg.C; (c) cooling the mixt. to -4 deg.C whilst simultaneously introducing a neutral gas, pref. air or nitrogen having the required purity for use in food prods. and foaming the mixt. to an expansion ratio of 60-120 (80) vol.%; and (d) after feeding into suitable containers hardening the mixt. at -20 deg.C.
