Abstract
The product comprises (%w/w): either 54-60 condensed milk and 40-46 crystalline sugar or 49.5-55.5 condensed milk and 40-46 crystalline sugar and 4.2-4.8 cacao powder and/or natural chocolate flavour. The milk, comprising 3.1% fat is pasteurised at 85 deg C for 1-3 minutes prior to thickening upto 44-48 dry matter, addition of other ingredients, further pasteurisation at 72-75 deg C for 1 minute, cooling to 30 deg C, injection of milk/sugar crystals, intensive stirring and cooling at a rate of 1-1.5 deg C and charging into tubs.
