Abstract

A találmány tárgya eljárás fermentált termék előállítására, amelynél afermentációs lépést megelőzően melegítési lépést hajtanak végre, ésamely eljárás tartalmaz egy olyan lépést, amelyben megfelelő enzimalkalmazásával fehérjék kölcsönös keresztkötését hozzák létre. Azeljárás jellemzője, hogy az enzimet a fehérjetartalmú kiindulási anyagfermentálása után adagolják és a fehérjetartalmú kiindulási termékmelegítése során vagy azt követően adagolják. A találmány tárgyátképezik továbbá a fenti eljárással előállítható termékek és fehérje-keresztkötést képző enzim alkalmazása kevert joghurt előállításánál,ahol az enzimet a fermentációs lépés után adagolják, ezáltalmegnövekedett viszkozitású és/vagy sima állagú joghurtot nyernek.
