Abstract

The invention relates to a wine production method consisting in producing wine from grapes sub-products resulted from the following wine-production process: 1) creation of grape pomace upon separation of each grape from the stalk; 2) introduction of the grape pomace into a fermentation cistern; 3) condensation of the resulted clean grape pomace and collection of the grapes liquefied condensation vapours; 4) fermentation into the related cistern; 5) completion of the wine production process; the alcohol content of the resulted wine is more than 14% by volume . The fermentation process is carried out at a temperature below the 18 deg. Celcius and into a cistern where the must is enriched with the distilled condensed grape pomace product.
