Abstract
Μέθοδος παραγωγής προϊόντων με βάση το κρέας που χαρακτηρίζεται από την εν ψυχρώ ενσωμάτωση ελαίου, κατά προτίμηση ελαιολάδου. Η μέθοδος περιλαμβάνει δύο φάσεις, ήτοι Φάση 1 και Φάση 2. Κατά τη διάρκεια της Φάσης 1, παρασκευάζεται ένα πρώτο γαλάκτωμα, ήτοι γαλάκτωμα (α), που περιλαμβάνει έλαιο, ένα γαλακτωματοποιητή ή μείγμα γαλακτωματοποιητών και φυτικές ίνες. Η Φάση 2 περιλαμβάνει, αρχικά, την παρασκευή ενός δεύτερου γαλακτώματος με βάση το κρέας (ψευδο-γαλάκτωμα), ήτοι γαλάκτωμα (β), στο οποίο έχει προστεθεί έλαιο, με άμεση, "εν ψυχρώ" ενσωμάτωση και στη συνέχεια την προσθήκη ποσότητας από το γαλάκτωμα της πρώτης φάσης, ποσότητας ελαίου. Τα δυο γαλακτώματα αναμειγνύονται μεταξύ τους σε αναλογίες που κυμαίνονται μεταξύ 0, 1:1 και 1:1. Προϊόντα τα οποία παράγονται με την μέθοδο ανάμειξης δύο γαλακτωμάτων, όπως αποκαλύπτεται στην παρούσα ευρεσιτεχνία και τα οποία μπορούν να περιέχουν γαλακτωματοποιητή ή μείγμα γαλακτωματοποιητών, είτε σταθεροποιητή ή μείγμα σταθεροποιητών, είτε πηκτωματοποιητή ή μείγμα πηκτωματωποιητών.
