Abstract

The invention relates to a process according which the olive fruit is conducted first to a two-phase centrifugal system 1-5 wherefrom two products are produced: the olive oil conducted to the storage cistern 5 and the olive stone conducted to the separation machine 6. The remaining olive pulp is conducted to a three-phase centrifugal system 8-10 producing olive oil, olive pulp and liquid waste; from said centrifugal system 8-10, the extra quantity of produced olive oil is conducted to the storage cistern 5, the oil pulp to the corresponding storage cistern 11 while the liquid waste is temporarily stored into a system of two in- series arranged cisterns 12,13 wherefrom the 40-60% of the volume of the liquid waste is conducted to the stone separator and the remaining liquid waste to the second cistern 13 in the interior of which there is placed a special filtering oil-sucking material. Then it follows the array of filters 14 and the evaporation machine 15 where water is completely evaporated and the remaining solid waste conducted in the form of sediment to the temporary solid waste storage cistern 16. After the process is terminated, the residues are conducted to the olive pulp storage cistern 11.Advantages: it is an environmentally friendly method implying: environmentally friendly management of solid waste upon olive stone separation and production of two sub-products (the olive stone for use as combustible material and the olive pulp for use as a fodder or fertiliser). Production of liquid waste being free of a large quantity of oil olive residues and suspended particles.
