In a bakers oven a steam generating vessel 10, e.g. a finned tube, is placed in or near the oven, e.g. in its flue 8, 9, for heating by recuperated or waste heat and delivers a charge of steam to the oven interior through nozzles 22. The generator 10 is supplied with a predetermined amount of pre-heated water from a vessel 11 surrounding the upper part of the flue which in turn is supplied with water from a constant level storage tank 12, filled with a ballcock 13. Burners 7 heat the oven which is preferably of the reel type with trays 5 loaded through a door 6. The flow of water and steam, Fig 2 is controlled by a single control handle 23 which has four operating positions. The first of these allows a charge of water to pass through a valve 14 from the vessel 11 to the steam generator 10; the second closes all outlets to allow generation of steam and a pressure build-up of about 30 p.s.i; the third allows steam to pass through a valve 15 to the nozzle 22; the fourth opens a blow down valve 16 which clears the generator vessel 10 of steam and water residues. A valve 28 reduces the steam pressure to the nozzles to about 5 p.s.i. and by means of adjustable valves 24, 26 a controllable amount of water from the base of the generator 10 may be admitted to the flow of steam. A further venting valve 17 (opened in fourth position) may be provided to supplement the venting path through the valve 15. A safety valve 19 and pressure guage 20 are fitted.
