Abstract

In producing malt and malt enzyme preparations grain is steeped in water to a subnormal water content of less than 40% by weight and the resulting sub-normally steeped grain is then subjected to germination while adding water to a normal water content and also adding successive small amounts of gibberellic acid until the total amount of the added gibberellic acid is from 1 to 4 mg. per kg. of grain; it is stated that the total time required to obtain a malt is decreased while there is obtained a malt of balanced composition in high yield. In a preferred procedure the grain is steeped at a temperature of from 16 DEG to 17 DEG C. for about 24 hours to a water content of from 38 to 39% by weight and is thereafter subjected to germination for about 5 days at an average temperature of about 13 DEG C., during the first 3-4 days of which the grain is sprayed twice a day with a solution in water of 1 part of gibberellic acid in 100,000 parts of water; the germinated grain is dried at 68 DEG C.
