Abstract
Dry, discrete beads containing stabilized fat-soluble vitamin comprising a fat core containing at least one fat-soluble vitamin encased within a heat-denatured, water-resistant, proteinaceous digestible shell are made by mixing a solution of the fat-soluble vitamin in molten fat having a melting point of at least 35 DEG C with an aqueous solution of a heatcoagulable, proteinaceous material consisting of one or more of the following viz., soy flour, wheat gluten, skim milk powder and skim milk, heating the mixture to effect incipient denaturation, homogenising the mixture to form an emulsion with the fat as the finely dispersed internal phase, and spray-drying the heated emulsion to complete the denaturation. Under preferred conditions, the mixing is effected at a temperature of about 10 DEG C above the melting point of the fat; the mixture contains citric acid, has a pH of 6,0-6,3 and a total solids content of 30-40%; and the heating of the mixture is to a temperature of 65-85 DEG C for about 10-30 minutes. The beads may include any antioxidant material customarily used for vitaminized feeds other than polyphenols. It is stated that proteinaceous material that has already been denatured by heat-processing, so that the material is no longer soluble in water, cannot be used in making the beads. Examples describe in detail the preparation of beads containing: (1) a hydrogenated coconut oil core containing crystalline Vitamin D3, Vitamin A palmitate in corn oil and butylated hydroxyanisole encased with a proteinaceous shell derived from solvent-extracted non-heat-processed soy flour and containing citric acid, (2) a hydrogenated soybean oil core containing Vitamin D3 in corn oil, Vitamin A in fish liver oil, Vitamin E in cottonseed oil and Vitamin K encased within a proteinaceous shell derived from skim milk powder, and (3) a hydrogenated babassu oil core containing crystalline Vitamin D3, Vitamin A acetate concentrate, Vitamin E in cottonseed oil, crystalline Vitamin K, and butylated hydroxyanisole encased within a proteinaceous shell derived from solvent-extracted non-heat-processed soybean flour and skim milk powder, and including also citric acid and specified B vitamins.
