Abstract
Optically active glutamic acid is racemised by heating an aqueous solution containing 15% to 35% by weight of optically active glutamic acid and 30% to 50% by weight of sulphuric acid to temperatures between 170 DEG C. and 200 DEG C. for from 3 to 15 hours.
