875,902. Aerated food fats. CHEMETRON CORPORATION. June 3, 1959 [June 23, 1958], No. 19019/59. Class 84. [Also in Group V] Pats of plastic material e.g. margarine, which incorporate a gaseous ingredient are formed by mixing with the material ingredients at high pressure a volume of gas, passing a portion of the aerated mixture into a moulding apparatus and allowing it to undergo a first expansion to a lower pressure, segragating said portion from the other material, and permitting said portion to undergo a second expansion to atmospheric pressure to form an accurately sized pat of pre-determined specific gravity. Liquid margarine ingredients comprising 2,600 parts by weight of selectively hydrogenated vegetable oil, 530 parts by weight skimmed milk, 100 parts by weight of salt, 5 parts by weight of emulsifier, 5 parts by weight lecithin, and 2 parts by weight of yellow food colouring are mixed in a tank 10, passed through conduit 16, aerated by a gas such as air or nitrogen from tank 19, and passed at about 300 p.s.i.g. and at 108‹F. through a cooling apparatus 24 to a tempering apparatus 38. From thence at about 75 p.s.i.g. the mixture passes through conduit 55 to an accumulation zone which leads on one side through conduit 57 to a moulding head 58, and on the other to a piston-loaded compensator. The head 58 is rotatable and has moulding compartments comprising cylinders 82, 83 and blocks 80, 81 which are intermittently fed from conduit 57 the average pressure in which is about 35 p.s.i.g. With block 80 and conduit 57 in register, block 80 is moved inwardly under said pressure to form pat 71 and through rigid coupling 84, a previously moulded pat 70 is carried from cylinder 83 to a wrapper wheel. Head 58 is then rotated a quarter turn, and blocks 80, 81 uncoupled, whereupon 71 swells, is reduced to atmospheric pressure, and removed upon further rotation similarly to pat 70. Before pat 71 is moulded blocks 80, 81 may be uncoupled, block 80 moved inwardly by the pressure of the material, the blocks recoupled, and moved outwardly to the position of Fig, 6 (not shown). Pats of lard, shortening, soap, waxes, and reconstituted butter may be prepared similarly. Specification 831,662 is referred to.
