Abstract
Dried fruit which has been soaked in water is preserved by packing it in sealed transparent foil containers which are air- and water-tight and subjecting these to heat-treatment with non-ionizing radiation, e.g. infra-red rays or high-frequency radiation. Preferably the fruit, e.g. dried prunes, apricots, sliced apples, &c., are soaked to a moisture content of 30 to 50% by weight and packed, together with a preservative, e.g. sodium benzoate, in thermostable foil bags, e.g. comprising a polyamide, a polyester or polyvinyl chloride, or regenerated cellulose film covered with one of these materials, which bags are then heat-sealed and exposed to a four to eight, preferably a five, minute heating by thermo elements placed above and below an endless gauze belt on which the bags are placed, the heating being of sufficient intensity for a temperature of at least 70 DEG C. to be quickly reached at the centre of the fruit. After heating the bags are cooled rapidly.
