Abstract

The kernels are steeped in water at ambient temperature for at least one hour, dried until their water content does not exceed 8% by weight and then deskinned. The drying is preferably carried out at elevated temperature, e.g. 150 DEG F to 200 DEG F. The water may be acidulated with 0,3% to 0,5% by weight of SO2 or HCl.
