Abstract
Cured meats contain a non-toxic, water-soluble cyclohexylsulphamate, e.g. 0.02% of the cyclohexylsulphamate. Examples are concerned with boiling hams which have been pumped to 20% with, and then immersed for 7 days in, a brine pickle containing sodium nitrite, sodium nitrate, pentasodium triphosphate, and sodium cyclohexyl sulphamate or calcium cyclohexylsulphamate.
