Abstract

Milk in containers is brought to the sterilizing temperature quickly by subjecting the containers first to a temperature above the sterilizing temperature and then to a lower temperature, the temperatures being chosen so that the milk remains at the sterilizing temperature, for the necessary time. An apparatus is used which is very similar to that described in Specification 794,662 the valves controlling the supply and release of steam being controlled automatically in sequence to give the required temperature cycle.
