Abstract
859,882. Cheese. NATIONAL RESEARCH DEVELOPMENT CORPORATION. Sept. 2, 1959, [Sept. 11, 1958], No. 29120/58. Class 84. Curd is fed to the upper part of a column 10 down which it flows under its own weight as it is removed from the bottom at such a rate that cheese of the required texture is produced. The column preferably tapers outwardly and is lagged to prevent loss of heat. Heating means may also be provided. The device for removing the cheese is shown in detail in Fig. 2 and comprises a plate 16, on which the curd rests, shaped helically to form a slot 19 which has a knife 17 at its upper edge and which is divided by vertical knives 20. The severed portions of cheese fall on to a conical plate 27 and are swept by rotating vanes 30 into a shoot 29. The whey drains through slots 33 into a tray 26, Fig. 1, The plate 16 is driven by a motor 25 through a variable speed gearbox 22. In another form the plate 16 is formed with two diametrically opposite slots and cutting edges. Alternatively, the slots may be formed between the adjacent leading and trailing edges of a number of inclined plates arranged in stop form and carried on a continuous band or at the periphery of a disc. Such a device may serve a number of columns 10 arranged side-byside. Various methods of charging and discharging the column 10 at the beginning and end of a run are described.
