Abstract
A hydrolysed protein substance is obtained by mixing the protein substance with a strong volatile mineral acid, heating the mixture to a temperature of 90 to 140 DEG C. so as to hydrolyse the mixture, removing the hydrolysis products from the hydrolysed mixture when the ratio of their total nitrogen content to their amino nitrogen content is less than ten and greater than one, removing the acid from the hydrolysis products, and replacing the acid removed from the mixture as a result of the removal of the hydrolysis products. The protein substance may be an extracted meat and the acid may be hydrochloric acid. The removal of the hydrolysis products and replacement of the acid may be continuous, fresh protein substance and acid being continuously added so that the volume of the mixture and quantity of solid substance remains constant, or until the protein substance is entirely decomposed.
