Abstract
A solid, spreadable fatty product for table use and in making bakery products is obtained by mixing 73-90 parts of a fatty mixture comprising 75-92% of an edible vegetable oil having at least 40% of linoleic acid and 8-25% of a hydrogenated vegetable oil, e.g. hydrogenated coconut oil, of m.pt. 112-145 DEG F, with 0.1-2 parts of glyceryl monostearate or lecithin, and with 10-25 parts of an aqueous milk product, e.g. skim milk, the mixing being carried out at a temperature above the m.pt. of the fatty mixture, emulsifying the mixture and rapidly cooling it. The vegetable oil is exemplified by maize germ, soya, safflower, cotton-seed, sunflower and peanut oils. A butter flavouring, a yellow dye, salt, a fat anti-oxidant may be incorporated.
