Abstract
A dietetic food consisting of honey from which undesirable protein has been removed but which retains the active principles, e.g. enzymes, vitamins &c. present in raw honey is produced by dissolving raw honey in a preferably equal weight of warm distilled water in a sterile atmosphere, e.g. an inert gas sterilized by ultraviolet rays, ultracentrifuging the solution, e.g. to 60,000 g., filter pressing, and clarifying, e.g. by filtration through a medium comprising alternate layers of asbestos and kieselguhr, the filtrate being concentrated by freezing into blocks to -40 DEG C., and then freeze-drying below 0,01 mm. pressure, at -20 DEG C. The glassy product which contains less than 5% of water can be incorporated in fruit jelly, custard &c., and is stable if kept in sealed containers containing nitrogen and protected from light.
