Abstract
Two cereal flour products are obtained from a parent flour consisting of a mixture of heterogenous particles, some consisting principally of starch, others principally of protein, by air fractionating the parent flour at a cut within a range of F.D. units (defined) that one of the products has a higher protein content whilst the other has a lower protein content, both relatively to the parent. The parent is selected from the group; wheat, rye, corn, barley and rice flour, and the cut used varies according to the parent flour. Critical cuts are given both for protein concentration, and for protein and ash depletion in the coarse fraction. The initial coarse fraction can be further fractionated the obtained fractions being again fractionated or the resulting coarse fraction combined with the initial fine fraction. Similarly, fractions from different level cuts can be combined. Specification 789,274 [Group II] is referred to.
