Abstract
In the production of spray-dried milk powder the milk is preheated to at least 260 DEG F., preferably between 270 DEG and 300 DEG F., for a period of 3 seconds or less, before being introduced into the drier. This heating, which is effected in e.g. a plate heat-exchanger or tubular heater, is desirably the second of two stages, the first stage involving heating the milk to between 170 DEG and 210 DEG F. in another section of the heater.
