Abstract

Cleaned and dressed food, e.g. meat, fish, vegetables, is placed in a container of flexible, waterproof, and preferably transparent, material capable of withstanding cooking temperatures, the container is evacuated and sealed, the package is heated to a temperature not above 100 DEG C. to destroy any vegetative microorganisms therein, cooled, stored at a temperature permitting development of any spores of micro-organisms, and the heating, cooling and storing steps are repeated until the food is sterilized. The container may be of polyvinylidene chloride, polyethylene or regenerated cellulose film or may be of parchmentized paper. Examples are concerned with (i) placing lobster, half-boiled in the usual manner, with some of the boiling liquid in a bag having an inner layer of parchment and an outer layer of synthetic resin, removing the air from, and sealing, the package, heating the package in boiling water or in steam therefrom for 15 minutes or more, cooling the package rapidly in cold water or a cold air stream, storing for one day, reheating for 15 minutes, and again cooling; (ii) placing a plucked, cleaned chicken in a cylindrical bag of polyvinylidene p chloride, removing air from the bag and sealing it, boiling the package in water for 2 hours, storing for one day, and reboiling for 1 hour; (iii) placing cream in a polyvinylidene container to fill 40-60 per cent of the maximum volume thereof, evacuating and sealing the container, immersing the container in boiling water or steam therefrom, and rotating, for 7-10 minutes, cooling, storing for 5-24 hours at 18-30 DEG C. according to the bacterial culture of the original cream, again heating in a similar manner, cooling again, and storing at 2-10 DEG C.; (iv) placing sausages in a container of polyvinylidene chloride, evacuating and sealing the container, heating it for 40 minutes, in a steam or water bath, storing for 24 hours at 25-30 DEG C., heating similarly again for 40 minutes, cooling, and storing at 2-10 DEG C.
