Abstract

Ready-to-eat cereal bodies are coated with a hard glaze which does not become sticky in moist air by distributing over the surfaces of the cereal bodies an aqueous syrup containing 60-85 per cent of dissolved solids consisting of sucrose predominantly and 1-8 per cent of non-sucrose sugar and then drying the syrup-coated bodies to 2-3 per cent moisture at such a temperature and for such a time that the amount of invert sugar formed does not increase the non-sucrose sugar to above 8 per cent of the coating. The drying may be for 7-8 min. at 275 DEG -300 DEG F., 15-20 min. at 225 DEG -250 DEG F., or 20-30 min. at 200 DEG -225 DEG F. The syrup may contain a viscosity-increasing agent, e.g. dextrin, gum, methyl cellulose, carboxymethyl cellulose, dextran or gelatinized maize, waxy maize or tapioca starch. The coating may constitute 25-60 per cent of the coated cereal product. Examples are concerned with treating corn flakes with a sugar syrup containing honey, salt and sodium acetate and with treating puffed wheat with a sugar syrup containing maize dextrin, honey, salt and sodium acetate.
