Abstract

753,988. Fruit juices. FOOD MACHINERY & CHEMICAL CORPORATION. Feb. 1, 1954 [Feb. 24, 1953], No. 2944/54. Class 14(2). Apparatus for de-juicing whole fruit comprises individual fruit-holding members 38, means for making an incision in the rind of a fruit whilst in the member, means for making an opening in the rind opposite the incision, pressure means 40 movable relative to the member and means for making the movement to apply pressure progressively to the rind at a zone outside the incision, the.opening, and a narrow space 202 adjacent the incision, whereby juice passes through the opening whilst the de-juiced fruit passes through the space. In operation, fruit is fed, in timed relation, to each member 38 as the means 40 begins to descend. Both members and means 40 comprise a series of equally-spaced circumferential fingers which, as the means 40 descends intermesh, thereby applying pressure to the fruit. An upper cutter 182 and a lower cutter 103 have respectively made the incision and opening, and when squeezing of the fruit begins the plug cut out to make the opening is forced into a finisher tube 66 followed by the juice which passes out through perforations 130 into a manifold 111. Meanwhile an outwardly sloping wall of the upper cutter 182 directs peel into the space 202 whence it passes through a chamber 155 after being slit by a knife 207 and shredded by the fingers of the means 40. Released peel oil and shredded peel particles are urged downwardly by the fingers, passing eventually to a trough. Full descent of the means 40 provides a seal (upper edge of a tube 65 extending into an annular recess in the cutter 182 and the lower edge of the cutter 182 extending into an annular recess 143 in the member 38) preventing peel oil entering the finisher tube 65. Plugs and residue pass through an opening for separate collection. The means 40 are moved by cam discs and rollers on a driven shaft. Orifice tubes 65, within the finisher tubes 66, are reciprocated by connections to cams on the driven shaft.
