Abstract

<PICT:0741412/III/1> <PICT:0741412/III/2> In a method for homogenizing chocolate paste, in particular for homogenizing powdered chocolate and cocoa butter, and also the primary mixture of cocoa liquor and sugar, a proportion of fresh components which are not homogenized are continuously added to an already homogenized mixture of the components which is continuously circulated through vats 5 and 15 by pairs of side by side screw conveyers, one conveyer of each pair, 7 and 16, being shown in Fig. 1. The mixture is forced through draw plates 12, 20 respectively at the end of the vats. The chocolate passing through the draw plate 20 is raised by a screw conveyer 22 to outlets 25, 26 which divide chocolate mass into two streams, one of the streams passing into the vat 5 for re-circulation, and the other stream passing to a further stage in the process of manufacture. Fresh components, such as cocoa liquor and sugar, are fed in desired proportions into the vat 5 through volumetric pumps 2 and 4 at a rate equal to the rate of discharge through outlet 26. The parts of the screw conveyers in the open part of the vat 5 are provided with notches 28, Fig. 3, to produce a stirring effect to incorporate the freshly-added material with the material being re-circulated. The ratio of freshly-added material to re-circulated material is less than one-third and is preferably about one-sixth.
