Abstract

In refining starch, e.g. wheat starch, having an average grain size coarser than rice starch and including a fraction with grains not larger than 7 microns, a suspension of the starch is separated into fractions containing particles of desired size in one or more hydrocyclones not exceeding 30 mm in diameter. One fraction may contain substantially no particles larger than 7 microns. Separation may proceed simultaneously with the washing out of soluble substances from the starch and fine particles may be removed from the wash water, e.g. after it has been thickened.
