667,375. Preserving eggs. LOUISIANA STATE UNIVERSITY & AGRICULTURAL & MECHANICAL COLLEGE, BOARD OF SUPERVISORS OF. Jan. 7, 1949, No. 555/49. Class 49. In preparing eggs for low-temperature storage they are dehydrated, by evaporating or diffusing water through their shells, until their weight has dropped 5 to 10 per cent and they are then frozen without risk of rupturing their shells. Dehydration may be effected in, vacuo and/or by dehydrating agents, e.g. phosphorus pentoxide and calcium chloride. Water may be diffused osmotically from the eggs by immersing them in a solution of pectin or gelatine. Dehydration may be facilitated by removing the porphyrin membrane of the shell with a dilute acid.
