Abstract
639,861. Treating wort. SOC. ALFALAVAL., and SOC. BELGE ALFA-LAVAL. June 30, 1947, No. 17207. Convention date, July 4,1946. [Class 14(ii)] In the production of beer, wort from the boiling stage is cooled to about 50‹C by trickling over a corrugated surface 4 cooled by two cooling systems 5, 6 in a vessel 3 through which and over the wort a current of air is blown causing co-agulation of the sludge which is carried by the beer as it passes to a plate cooler 11 where the temperature is reduced to about 1‹C when it is allowed to trickle over the inner corrugated surface 15 of a vessel 14 insulated by lagging 16 whilst air is blown through. The beer collecting at the bottom of the vessel has practically all the co-agulated coarse and fine sludge and is clarified in centrifuges 19 and passes to the fermentation tank 21. The Specification as open to inspection under Sect. 91 states also that the sludge may be co-agulated exclusively in the vessel 14 providing the wort coming from the brewhouse is chilled to 1‹C in the plate cooler 11. This subject-matter does not appear in the Specification as accepted.
