Abstract
Milk powder of low grain porosity and enhanced freedom from "tallowiness" on storage, is made by atomizing milk in droplets of about 100 m diameter into a gaseous drying medium and subjecting the moving droplets, while they are still relatively non-viscous, to deflecting or retarding gas currents of magnitude sufficient to cause the entrained gas bubbles to be expelled from each droplet, and to produce a dry powder with an average grain porosity below about 8 per cent by volume. The Specification as open to inspection under Sect. 91 comprises also the use of electric fields or ultra-sonic waves to provide the deflecting forces.
