[Classes 46 and 84] In separating the final whey from curd in the manufacture of cheese, the curd and whey are subjected in a perforate revolvable drum, adapted to retain the curd and to allow the whey to pass therethrough, to intermittent rotary movement, while the axis of the drum is more or less horizontal. As shown, the drum consists of a perforate sheet metal central section 10<SP>1</SP> with imperforate converging extensions 11 with inlets 12 mounted in a frame 13 on a pair of rollers 20 on each side at the top. The frame 13 is mounted in trunnions 14 carried by a supporting frame 16 on a movable base adapted to be driven on lines 18 between two sets of vats 19 by an electric motor 31 and by means of a handwheel 33. The drum is rotated by means of an electric motor 28 through a reduction gear and spindle 26 connected by chain and sprocket gearing 25 to spindle 24 on which are mounted pinions 23 engaging toothed gear rings 22. The drum and frame 13 are tiltable about the trunnions 14 one of which may be fitted with a toothed quadrant engaged by a worm rotatively mounted on the frame 16 and fitted with a handwheel 29. A tray 37 beneath the drum catches the whey from which it is discharged to a launder 46 the curd being discharged into a vat by tilting the drum as shown in dotted lines. A portable centrifugal pump 40 is supplied whereby the curd and whey may be transferred from the vat to the drum and if necessary may be circulated to the same or another vat previously in order to firm the curd.
