Abstract
Pure anhydrous carrageen jelly is prepared by adding an alkali-metal salt or mixture of such salts and an alcohol to the strained extract obtained by boiling carrageen with water, the alcohol being added at the same time as or after the salts, the precipitate thus obtained being washed, preferably by an alcohol-water mixture, dried and ground. The extract may be frozen, melted and filtered after the addition of the salts so as to remove a considerable quantity of water prior to treatment with alcohol.
