487,353. Preserving meat. NEIL, D. Feb. 26, 1937, No. 5897. Convention date, April 24, 1936. [Class 49] Animal careases are treated to remove blood and latent animal heat by passing under pressure a liquid flushing medium through the blood circulatory system to flush substantially the blood therefrom and then passing through the system a cooling medium under pressure. As described, a rigid tube 1 is inserted in one of the carotid arteries, the other of which is ligatured or constricted to prevent the flushing medium escaping therethrough. A nozzle 3 having one outlet 4 and three inlets 5, 6, 7 for hot water, cold water and air connected to supply pipes 10, 11, 12 and having control valves 8 is detachably secured, e.g. by a bayonet joint 2, to the tube 1. Hot water is injected under pressure through tube 1 until the blood is expelled, leaving through the opened jugular veins. Cold water under pressure is next supplied through tube 1 and, before the carcase has unduly stiffened, air under pressure is applied to expel the surplus water. The carcase may then be treated in the usual manner prior to chilling, freezing or cold storage.
