Abstract
345,329. Cooling meat. TRIGGS, W. W., 57, Lincoln's Inn Fields, London.- (Swift & Co. ; Union Stock Yards, Chicago, U.S.A.) Dec. 16, 1929, No. 38454. [Class 29.] Meat is prepared for marketing by separation from a carcass or carcasses, immediately after killing and before rigor mortis has set in, into a plurality of bone-freed portions, moulding these portions whilst the meat is limp into any desired shape, and then chilling to remove animal heat. The moulded material becomes set and retains its moulded form. The warm meat pieces 2 may be inserted in a mould 3 having a cover 4 through which pressure is preferably applied. The interstices 5 occurring in the meat mass become filled with meat juices and, if desired, a binding material, e.g. gelatine, may be added. The mould is then placed in a refrigerator and chilled nearly to freezing point and the solidified mass is finally removed for wrapping &c. In a modified form of mould 11, Fig. 6, one end 15 is open and a movable cross wall 16 having clamping means is provided.
