339,172. Zarotschenzeff, M. T. Feb. 16, 1929, [Convention date]. Preserving meat, fish,fish. &c. - Perishable animal foodstuffs, for example meat, such as beef, pork, poultry or game, and more especially fish, are rapidly chilled or frozen for preservation or transport by subjection to air saturated with a highly atomized liquid such as fresh or sea water or brine in the form of fog and at a low temperature for example -22<‹> to - 25‹ C. The foodstuffs may subsequently be defrosted by treatment with a fog-laden atmosphere at a temperature above freezing. In the example given, carcases 22, 23 or boxes of fish 24 are hung on rails within an oscillated treatment chamber 1. The fog is obtained by forcing the cold water, brine or other liquid into the chamber through atomizers 7. An inclined bottom 16 collects the liquid deposited in the chamber after it has first passed through a strainer 15 for removing dirt, the liquid leaving through a pipe 26 to a refrigerating tank 5 the upper part of which has a strainer 12. The liquid is cooled in the tank 5 by coils &c. 14 through which a refrigerating fluid is passed. The liquid is returned to the atomizers 7 by a pump 11 through a strainer 27, a pipe 28, one of the charcoal or like sterilizing filters 8 having valves 9, 10 and pipes 30, 20, 21. The pipes outside the chamber 1 are insulated. When the articles are -frozen through by using a low temperature such as -20‹ to -25‹ C., they are subsequently glazed with ice by dipping in or applying fresh water. Any moisture on the surface of the chilled articles may be removed by means of absorbent sheets &c. or by placing them in a chamber to which cold purified air is supplied. The Specification as open to inspection under Sect. 91 (3) (a) comprises also the provision of cooling pipes in the chilling chamber, and the use of the chamber for storage of the food subsequent to the chilling. This subject-matter does not appear in the Specification as accepted.
