Abstract
In smoking foodstuffs, the smoke is admitted to the treatment chamber after the foodstuffs have been inserted therein and the chamber subjected to vacuum. Preferably the smoke is supplied gradually to the chamber from a separate smoke-producing compartment. The treatment may be a repeated one. Sausage meat may be smoked prior to filling into the skins; the smoking chamber may be in the form of a mixing machine in which smoking and mixing of the meat is effected simultaneously.
