Abstract

A method of preparing cereals for ready extraction consists in subjecting the roasted cereal tissues mixed with saccharine material to mechanical pressure for rupturing the cells without completely disintegrating them. The product is thereby converted into the form of firm individual flakes of such uniform thinness as to render the soluble ingredients fairly equally accessible to an extracting solvent. Thus, roasted wheat, rye, corn, &c., may be mixed with molasses and passed between hot rollers. The coarsely ground roasted particles may be tempered by a water spray or by tumbling them into a humid container, before hot-rolling, to render the vegetable tissues pliable. The flakes are about 0,001 inches thick.ALSO:A method of preparing cereals for ready extraction consists in mixing the roasted cereal tissues with saccharine material and subjecting the mass to mechanical pressure to rupture the cells without wholly disintegrating them. The product is firm individual flakes of such uniform thinness as to render the soluble ingredients fairly equally accessible to an extracting solvent. Thus, roasted wheat, rye, corn, &c. may be mixed with molasses and passed between hot rollers. The coarsely ground roasted particles may be tempered by moisture before hot rolling. Thus flakes are about 0,001 inches thick.
