Abstract

In a process for the production of yeast, with or without the production of alcohol, pitching yeast is mixed with liquor which is free from sugar, and sugar-containing wort is supplied to the mixture in regulated quantities while aerating. The pitching yeast is acidified with a salt of phosphoric acid, e.g. superphosphate. In an example, for the production of yeast without alcohol, 20 kg. of pitching yeast is dissolved in 700 litres of water containing 7 per cent of superphosphate and 7 per cent of ammonium sulphate, and is allowed to act for 40 minutes. A total amount of 41,2 kg. of molasses, 3kg. of superphosphate and ,9 kg. of ammonium sulphate are subsequently added. The molasses supply begins with full aeration and continues for 9 hours and the nutrient salt supply begins one hour later and continues for 8 hours. Alcohol also is produced if, after some hours the supply of molasses is increased and the aeration is diminished.
