Abstract

An egg preparation enclosed in eggshell is obtained by extracting the white through a hole in the shell and introducing into the shell an alcoholic liquid or other beverage or food capable of preserving the yolk and mixing this substance with the yolk. Alternatively, the contents of the egg may be removed through a hole in the shell which is then washed, sterilized and rendered inpermeable and filled with an emulsion of yolk with an alcoholic liquor e.g. brandy, marsala, vermouth, or other spirits, or wines of high alcoholic content. The hole in the shell may be closed by means of mastic or the like, and the shell may finally be covered with a film of a sealing material, such as cellulose varnish, water glass solution or a paraffinic or resinous substance. The shell may be washed with a disinfectant, e.g. milk of lime, prior to boring. Substances may be added to the egg preparation to give a mixture with concentrated nourishing or medicinal properties; e.g. a tonic and strengthening beverage is prepared by mixing yolk of egg, glycerophosphates, alcoholic substances, aromatic substances and sugar.
