Abstract

A meat roll is prepared by wholly or partially surrounding a core comprising edible material of the nature of a relish with a moulded shell of meat or fish material which is coarsely chopped, sliced, shredded or minced or is in the form of a paste, the relative proportions of the two materials being the same in any transverse slice of the roll. The meat or fish portion may contain gelatine, egg, tomato &c., and, if a paste, bread. The meat may be beef, veal, pork, poultry or game. The relish material may be red currant jelly, vegetables, fruits or pulps or essences thereof, preferably consolidated by gelatine, fat, farinaceous material &c. and may include spices, condiments or flavourings. The roll is preferably round in section but may be oval, square, triangular &c. and may be prepared by forming the shell of warm meat material containing gelatine, e.g. by applying it to the inner wall of a hollow vessel, allowing to set and then inserting the relish material in warm condition. A double walled mould may be used in which the inner wall is withdrawn when the shell has been placed in position. The roll may be formed of layers of the relish material sandwiched between portions of the meat material. Specifications 337,340, [Class 49], 341,760, 377,256, and 377,766 are referred to.
