Abstract
A process for disembittering and improving soya beans and like ligumines by dialytic extraction of the readily soluble parts, such as carbohydrates, with water, consists in carrying out the dialysis of the unhusked beans at a temperature between 65-80 DEG C. and under a pressure which is greater than, or less than, that of the atmosphere. Soya beans, after washing, are placed in a perforated receptacle in a closed tank and covered with water at 68 DEG C., air being forced into the tank. Alternatively, the beans may be treated at 65 DEG C. under a pressure equivalent to two-thirds of an atmosphere. In preparation for grinding, adhering water is removed from the beans in a centrifugal separator, and the beans dried; the beans are husked before or after drying. The diffusion extract may be fermented. The Specification as open to inspection under Sect. 91 states that pressures of one-third of an atmosphere and of two atmospheres are suitable. This subject-matter does not appear in the Specification as accepted.
