Abstract

[Class 28 (ii).] The fish is acted upon by angularlydisposed rotary discs b, bl having peripheries formed with radially projecting points d<1>. The discs b, bl operate one on each side of the backbone, and the points d<1> engage the rib-bones and prise them away from the flesh. A stationary knife d, which ploughs out the backbone, is arranged with its point d2 between the operative zones of the discs b, b<1>, and adjacent thereto is positioned a guide f which is shaped to spread the fish. The guide is of V-shape, having flange-like extensions at its widest section, and is slotted at f<2> to assist in the removal of the rib-bones by the discs. A modified form of guide is described for use when preparing fish for pickling, when a smooth flesh surface is of greater importance than the clean removal of the bones. This guide is not gapped at f<2> and the front edges are sharpened. An auxiliary knife is adjustably carried by the modified guide to cut the back of the fish partially or completely through, to prevent the natural resilience of the fish from closing the fish after the removal of the bones.
