Abstract
A nutritive product containing enzymes, vitamin B, and amino acids and bases is prepared from press yeast by treating a small quantity of the yeast with a sterilized solution of cane sugar at the optimum temperature for fermentation, e.g. for 30 hours at 30 DEG C., carbon dioxide and alcohol being produced. A larger quantity of yeast is then added, the carbon dioxide which fills the vessel preventing the entry of bacteria, and when fermentation is completed, e.g. after a further 24 hours, cane sugar is added in quantity sufficient to allow autolysis and to favour plasmolysis of the yeast and to reduce the adverse effect of the alcohol present on the autolysis, e.g. a 10 per cent solution of sugar and a temperature of 45 DEG C. are employed, the alcohol present acts antiseptically and facilitates subsequent filtration. The product is finally filtered and the colloidal fluid obtained is dried, e.g. at 65 DEG C. and under vacuum, and powdered. Lactose may be added during the drying.
